Suggested Recipe Pairing presented by
Coconut Rice Sweet Potato Cheesecake

RiceSelect's creamy Arborio gets blended with sweet potato, coconut milk and vanilla to create this decadent cheesecake. Pairs well with Saunternes; a white dessert wine that has hints of coconut from aging in oak barrels.

Rich dark berry aroma (and I get a bit of ham in there as well, for some strange reason - I guess it's time for dinner!). Chocolatey, creamy mouth feel. Not too sweet, with nice tannins in the back.

Full and rich in the nose, smooth and full of raspberries and cherries. Palate is quite big and bordering on sweet, with licorice, cherry cola, round smooth tannins, leather and a cocoa finish.

Rich on the mouth, with notes of dark, ripe red fruit and dark chocolate.

Thick nose of red and black fruits. Very concentrated palate with rich mouthfeel. Thick is the descriptor for this wine all around, but it's not overly dense or overpowering. Nice floral berry tones with nice integrated tannin. Long lasting and powerful. The only flaw for me, is the heavy tannin on the finish. That should dissipate with time. - Tasted at Khoury's 6/2/10

A revelation it is hard to believe the 2011 Cabernet Sauvignon One Point Five (95% Cabernet Sauvignon and 5% Petit Verdot) came from a challenging vintage of cool weather and rainy periods. It boasts an inky/purple color along with sweet cassis and mulberry fruit intermixed with notions of high quality toast and spring flowers. Although it does not reveal the mid-palate density and impact or finish of the 2010 the 2011 is an outstanding success for the vintage. - Robert Parker Robert Parkers Wine Advocate.

The glass comes alive with aromas of crushed red and black summer berries, rose petal and herbs. In the mouth the generous, lush black and red fruits integrate enticingly with sage, tobacco leaf, smoke and black spice all wrapped within a structure of ripe Stags Leap District tannins. The finish is long and pleasurable. Herbs graphite menthol pine and black plums meld together in the 2011 Cabernet Sauvignon One Point Five. The 2011 is decidedly dark intensely mineral and savory throughout. Sage rosemary and anise are some of the many nuances that add depth over time. In 2011 the blend includes 5% Petit Verdot which contributes to the wine s dark balsamic-inflected personality. Lots of industry talk about the 2010 vintage for Napa, and Shafer is a shining example of how great this vintage will be. Layered and structured, with intense concentrated aromatics and powerful tannins, you can enjoy this now but will reward the patient.
