Shafer Vineyards:
From a modest beginning of 1,000 cases in 1978, the winery has grown steadily until reaching its present size of 32,000 cases of Cabernet Sauvignon, Merlot, Chardonnay, Sangiovese and Syrah. Today Shafer wines are available in major markets nationwide and in many foreign markets.
Suggested Recipe Pairing presented by
Layered Rice Pudding

RiceSelect's fragrant Jasmati® is blended with eggs, milk and fall's favorite spices, cinnamon and nutmeg, to create a delicious rice pudding, which is layered on top of fluffy cream cheese and abuttery pecan crust. Pairs well with a bold, tawny port with flavors of dried fruits, nuts, and spices.

Another great Hillside Select from selected blocks in Shafer’s vineyard. It’s a perfect illustration of the “iron fist in a velvet glove” description of Stags Leap Cabernet, with perhaps more emphasis this year on the velvet than the iron. With smooth tannins and luxurious, oak-influenced blackberry and black cherry jam flavors, it’s delicious now and will provide plenty of pleasure over the next 8–10 years.

The 2008 Cabernet Sauvignon Hillside Select is quite structured. Even with its firm tannins, though, the wine shows gorgeous depth and sheer power. The 2008 isnandrsquo;t a wine with early appeal, but it shows off tons of muscle and sheer depth. Dark fruit, leather, licorice, spices and tar inform the muscular, virile finish. The 2008 will require patience but its explosive personality virtually ensures it will be a rock star in a few yearsandrsquo; time. Anticipated maturity: 2016andndash;2028.

Ruby-red, a bit less saturated than the 2007. Crystallized black cherry, cassis, licorice and violet on the nose. Leaner on entry than the 2007, then broadens impressively in the middle, offering a dense, silky texture with a lovely light touch. The dark fruit, espresso and menthol flavors are slightly liqueur-like but boast excellent definition and lift. Finishes with firm tannins that will require bottle aging.

Muscular and tightly wound, yet beautifully focused and proportioned, dense and chewy, delivering rich layers of dried currant, blackberry, spice and licorice flavors. Demands cellaring. Best from 2014 through 2028.
