Shafer Cabernet Sauvignon Stags Leap District. Napa Valley 2007

External Review:

Rating: 90/100 - As reviewed by Connoisseurs' Guide to California Wine (www.cgcw.com) in the August 2010 issue. Following in the Shafer tradition of very ripe and expressive wines, this one smells of black cherries, cola, graphite and an unusual suggestion of green leaves. It is full and supple on the palate, and its ripeness shows here as well, but the wine also comes with plenty of primary fruit and a good bit of range, all of which give it lots to like.Connoisseurs' Guide to California Wine aging recommendation: Drinkable now. Further bottle aging can improve this wine.

Shafer Vineyards:
From a modest beginning of 1,000 cases in 1978, the winery has grown steadily until reaching its present size of 32,000 cases of Cabernet Sauvignon, Merlot, Chardonnay, Sangiovese and Syrah. Today Shafer wines are available in major markets nationwide and in many foreign markets.
Suggested Recipe Pairing presented by
Coconut Rice Sweet Potato Cheesecake

RiceSelect's creamy Arborio gets blended with sweet potato, coconut milk and vanilla to create this decadent cheesecake. Pairs well with Saunternes; a white dessert wine that has hints of coconut from aging in oak barrels.
