Food Pairings for Shafer Cabernet Sauvignon Hillside Select Stags Leap Cabernet Sauvignon
April 3rd we decanted it for 3 hours before it was in the glass. The Aroma did not diminish with fermentation strong turn into age "bouquet." The flavor was so deep and well balanced the 4 year oak and 100% cab grapes had black truffle with chocolate and plumes inside your head. This is the only way i can try to explain this Cabernet is dramatic example of the Stags Leap District style .Have a bottle of this any vintage and enjoy .The 3 other bottles of this i have i will keep for a decade at least.

Shafer Hillside Select, our signature wine of limited production, is made of 100% Cabernet Sauvignon, the grapes selected from the best lots grown on Shafer’s hillside vineyards in the Stags Leap District. Truly a wine of a place, this Cabernet exemplifies the concentration of hillside grapes and the extraordinary richness and suppleness of Stags Leap District fruit. Aged a full four years prior to release (three years in Alliers and Tronçais oak barrels and one year in the bottle), the Hillside Select is a wine with rich chocolate, blackberry and currant flavors and a soft, velvety texture. MAGNUM 1.5L
The 2004 Cabernet Sauvignon Hillside Select performed even better this year than it did in 2007. It possesses an inky/ruby/purple color, a juicy perfume of black currants, black cherries, graphite, charcoal, and toasty oak, superb opulence, a fleshy mid-palate, a multilayered mouthfeel, and a dazzling finish. This flamboyant, sexy Hillside Select can be enjoyed now and over the next 20 years.
2004 Shafer Hillside Select Cabernet Sauvignon97ptsRP "One of the worlds, as well as Napas, most profound Cabernet Sauvignons is the 2,000 or so case production of Shafers Hillside Select. Made from their finest parcels in Stags Leap, the wine spends nearly 32 months in 100% new oak. This is a wine that usually has 20-30 years of aging potential. The 2004 Cabernet Sauvignon Hillside Select is showing even better than it did last year. A much sexier, opulent, flamboyant style of wine with notes of black currant liqueur intermixed with toasty new oak, charcoal, smoke, barbecue spices, and oodles of fruit, this wine has fabulous richness in an exuberant, sexy style, and a long, heady layered finish with nothing out of balance. The integration of acidity, tannin, wood, and alcohol are brilliant. This is a great wine to drink over the next two decades, if not longer. One of Napas most prominent and respected wineries, Shafer is a poster boy for remarkable and consistent quality across the board. All of this is the work of the brilliant father and son team of John and Doug Shafer as well as their long-term winemaker and vineyard manager, Elias Fernandez. With over 200-plus acres of estate holdings, and 55 surrounding their winery in Stags Leap, this is a winery that never seems to disappoint."94ptsJL "Pure, rich, intense and vibrant, with tight, sharply focused, vivid black cherry, blackberry and black currant fruit that has a nice dusty, loamy edge and ends with a pleasant burst of ripe fruit flavors that are long and persistent. Best from 2009 through 2014."winery notes: "This is a classic Hillside Select striking a balance of dark, lush, jammy fruit with youthful elegance. These are the enduring aromas and flavors of our hillside grapes loads of blackberry, cassis, dark chocolate, juicy black cherry, black pepper integrated nicely with oak, char and vanilla all tied up in a bow of silky, firm, easy-to-enjoy tannins. In terms of its weight and style, this one is a close relative of the 1999 vintage."This is a California wine.
