Shafer Cabernet Sauvignon Hillside Select 1996
With more herbs, cedar and tea than its ’97 sibling, this one is embracing age. Ripe aromatics and big, balanced fruit flavors. Deep color in the center of the glass with brick at the edge, silky texture and maturing fruit, showing elements of black currant and dark spice with a long finish.
From a modest beginning of 1,000 cases in 1978, the winery has grown steadily until reaching its present size of 32,000 cases of Cabernet Sauvignon, Merlot, Chardonnay, Sangiovese and Syrah. Today Shafer wines are available in major markets nationwide and in many foreign markets.

Starts out smooth showing rich earthy currant hazelnut and nutmeg scents with a hint of mocha and dense chewy tannins. Still very youthful firm and extracted. The first two bottles were corked.--1996 California Cabernet retrospective. Drink now through 2012. -JL Wine Spectator.
