External Reviews for Shafer Cabernet Hilside Select
The 1999 Cabernet Sauvignon Hillside Select is one of the finest wines of the vintage. The 14.9% alcohol is barely noticeable given the amazing concentration and intensity. A saturated opaque purple color is followed by scents of vanilla, blackberry liqueur, crushed minerals, and a hint of white flowers. There is stunning intensity, tremendous purity, full body, and a remarkable, seamless finish (amazing given the elevated, austere tannin). Give the 1999 another 2-3 years of cellaring, and enjoy it over the following two decades or longer.
Saturated bright ruby. Rich aromas of dark berries, candied cherry, smoke and tobacco. Sweet, lush and deep, with good clarity and lift in spite of its very ripe, thick texture. Black raspberry and dark cherry flavors are complicated by brown spices. A very sexy and pliant wine that finishes with sophisticated tannins. This already gives great pleasure, even if it doesn't offer quite the fireworks of the best recent vintages.
Has lots of richness, depth and complexity, with layers of earthy currant, anise, black cherry and blackberry fruit, showing far more depth and ripeness than most from this vintage. Drink now through 2008.
Shafer's flagship wine is the 2,000 case cuvee of Hillside Select Cabernet Sauvignon. Aged 32 months in 100% new French oak prior to bottling, it is one of the world's greatest Cabernet Sauvignons. The perfect, incredibly flamboyant and aromatic 2002 Cabernet Sauvignon Hillside Select is one of the most profound California Cabernets I have ever tasted. Boasting an inky/purple color as well as an extraordinary perfume of projected aromas of smoke, black currants, flowers, licorice, and subtle oak, it possesses phenomenal intensity, a multilayered mid-palate, and a finish that lasts for over a minute. This is as profound as Stags Leap Cabernet Sauvignon can be, combining extraordinary power, texture, richness, and depth with remarkable complexity, elegance, and seamlessness. Drink this spectacular offering now and over the next 25+ years.
Saturated full ruby color. Brooding aromas of cassis, black raspberry, smoke, chocolate, graphite and minerals. Thoroughly ripe, rich and tactile, but with captivating lift to its flavors of blackberry, black raspberry, cassis and flowers. Highly impressive mounting finish saturates the palate with flavor. Already shows great sweetness, but the wine's tight core of fruit suggests it will develop slowly and gracefully in bottle. Boasts a combination of lushness and energy that's rare for California Cabernet.
Like the best vintages of Hillside Select, this wine has tremendous structural power that remains almost imperceptible. On the surface, the tannins are pillowy soft, their supple richness surrounding a core of dark fruit. The wine is black but not hyperextracted, the layers of dark chocolate flavor seem to come from the soil rather than from oak (it's not the sort of mocha or milk chocolate character that oak aging provides). This is a cigar-smoker's cabernet, a powerful, resinous vintage from a vineyard with a track record for wines that age well over ten to 15 years. (2,400 cases) Shafer Vineyards, Napa, CA
Saturated ruby. Brooding aromas of blackberry, cassis, bitter chocolate and truffle. Superripe, broad and layered; outsized and dense but not heavy. The fruit flavors are extremely ripe but not roasted. Finishes with huge, sweet, toothcoating tannins and outstanding persistence. Still a baby but already wonderfully focused. A great, full-flavored example of Napa Valley cabernet.
