External Reviews for Shafer Cabernet Hilside Select
Saturated full ruby color. Brooding aromas of cassis, black raspberry, smoke, chocolate, graphite and minerals. Thoroughly ripe, rich and tactile, but with captivating lift to its flavors of blackberry, black raspberry, cassis and flowers. Highly impressive mounting finish saturates the palate with flavor. Already shows great sweetness, but the wine's tight core of fruit suggests it will develop slowly and gracefully in bottle. Boasts a combination of lushness and energy that's rare for California Cabernet.
...Medium ruby. Black cherry and red licorice on the nose; largely avoids the herbal aspect shown by this winery other 1998 reds. Very intense flavors of black cherry licorice and mint but still tightly wound even a bit clenched and unevolved for a 98. Very long firm finish hints at mint and exotic Indian spices... One of the world's most prodigious Cabernet Sauvignons is Shafer's 2,000-case cuvèe called Hillside Select. Always 100% Cabernet Sauvignon aged in 100% new French oak for a whopping 32 months, it boasts a gorgeous track record dating back to the early nineties, and just about every recent vintage has flirted with perfection. The 2004 Cabernet Sauvignon Hillside Select performed even better this year than it did in 2007. It possesses an inky/ruby/purple color, a juicy perfume of black currants, black cherries, graphite, charcoal, and toasty oak, superb opulence, a fleshy mid-palate, a multilayered mouthful, and a dazzling finish. This flamboyant, sexy Hillside Select can be enjoyed now and over the next 20 years.
Good saturated medium ruby. Reticent but pure nose dominated by brisk black fruits. Very dense and chewy, with sharply delineated flavors of cassis, black cherry and menthol, and the dark chocolate element shown by many past vintages of this bottling. This has excellent verve. The ripe, even tannins saturate the teeth and palate. This is the last vintage of this bottling that includes the estate's oldest parcels (1975). Offers outstanding potential.
Shafer's flagship wine is the 2,000 case cuvee of Hillside Select Cabernet Sauvignon. Aged 32 months in 100% new French oak prior to bottling, it is one of the world's greatest Cabernet Sauvignons. The perfect, incredibly flamboyant and aromatic 2002 Cabernet Sauvignon Hillside Select is one of the most profound California Cabernets I have ever tasted. Boasting an inky/purple color as well as an extraordinary perfume of projected aromas of smoke, black currants, flowers, licorice, and subtle oak, it possesses phenomenal intensity, a multilayered mid-palate, and a finish that lasts for over a minute. This is as profound as Stags Leap Cabernet Sauvignon can be, combining extraordinary power, texture, richness, and depth with remarkable complexity, elegance, and seamlessness. Drink this spectacular offering now and over the next 25+ years.
Has lots of richness, depth and complexity, with layers of earthy currant, anise, black cherry and blackberry fruit, showing far more depth and ripeness than most from this vintage. Drink now through 2008.
Like the best vintages of Hillside Select, this wine has tremendous structural power that remains almost imperceptible. On the surface, the tannins are pillowy soft, their supple richness surrounding a core of dark fruit. The wine is black but not hyperextracted, the layers of dark chocolate flavor seem to come from the soil rather than from oak (it's not the sort of mocha or milk chocolate character that oak aging provides). This is a cigar-smoker's cabernet, a powerful, resinous vintage from a vineyard with a track record for wines that age well over ten to 15 years. (2,400 cases) Shafer Vineyards, Napa, CA
