- Our 1997 Reserve Chardonnay is made entirely from grapes grown in the Nivens world class Paragon Vineyard in the Edna Valley. The vineyards close proximity to the Pacific Ocean and its cooling breezes produced a rich, lush Chardonnay with medium straw color. The wine shows attractive citrus and tropical aromas with toasty French oak in the background. The use of tight grained French oak gives the wine structure without imparting an overt oak flavor. - This Chardonnay was made from grapes grown in the Nivens Edna Valley vineyards and other premium Central Coast vineyards that were picked at optimum maturity to maximize fruit flavor. Classic winemaking methods were used with whole clusters pressing, barrel fermentation, lees stirring and malolactic fermentation to produce a Chardonnay with complexity and rich exciting flavors and aromas.
