Editorial Reviews for Seven Hills Winery Cabernet Sauvignon Walla Walla Valley
Layered and a bit reticent on the nose with notes of dried laurel, tobacco and black fruits gently edged with vanilla and wood spice. A bit loose on entry but gently structured like a pool of warm black raspberry coulis that enrobes the tongue. Actually rather elegant, light and expressive, with late building ripe tannins and a light minty top note on the moderately long finish. Elegant and refined with nice purity and balance. 90pts

Rating: 87/100 - As reviewed by Connoisseurs' Guide to California Wine (www.cgcw.com) in the August 2010 issue. Just slightly preferred over its deeper mate below, this one gets the nod for its more evident fruit-and never mind that that fruit tips a bit to boysenberries and comes with a more velvety texture somewhat suggestive of Merlot. Age might round off its few rough edges, but, on the whole, this wine will reward earlier drinking.Connoisseurs' Guide to California Wine aging recommendation: Drinkable now. Unlikely to improve with further aging.
WS 92pts - Winemaker Notes - Intense dark red. Elegant fragrance of dust, marzipan, red plum, black currant, spice, licorice and dried herb. Polished, complex palate of red & black fruits, bitter almond, herb, black licorice and sweet spice. Smooth, bright, lengthy finish. Aged exclusively in French oak, approximately 40% new, the profile is round with notes of clove and nutmeg. This is a Cabernet Sauvignon with great varietal character and a smooth lengthy finish. Historically these wines will show well for a decade or more, this vintage will age beautifully over the next 8-15 years. A collectable, limited bottling from one of the most highly regarded Northwest vineyards, that will not disappoint in the cellar.
Winemaker's Notes:
Fruit for this wine is sourced from diverse, complementary sites within the Columbia Valley. Medium bodied with deep red color, there is exuberant ripe blackberry in the nose with clove and vanilla accents Malbec shows floaral notes in the nose. These follow through on the palate with Carmenere adding hints of dried herb, white pepper and red raspberry The varietal blend gives this wine complexity while remaing delighfully balanced, accessible and Cabernet like in character. I believe it represents an outstanding level of quality and value and estimate that it will age very well for up to 4-6 years if properly cellared.
