Seven Hills Ciel du Cheval 2007

Editorial Review by Gregory Dal Piaz:

This is Bordeaux like with crystallized blackberry and currant fruits joined by notes of blond tobacco, turmeric, gun powder and green peppercorns. This is big and rich, broad across the palate yet with nice cut. The flavors lean a bit towards the red fruit end of the spectrum with notes of red apple peels and red currants on the mid-palate that are joined by green spice tones and spicy oak notes that lead to a moderate finish full of black raspberry and jammy black plum. Again the tannins are very well managed and polished. This needs another year or two to fully integrate but should be excellent from 2012-2020 92pts

Light nose is still a little hot with a hint of an herbaceous character with some clay. Flavors are of blackberry, medium tannin and acidity. I would hope for some more balance between the acidity and the fruit, but it's a good wine, clean and refreshing. Light chocolate finish.

A little bit sharp with the acids, but there are some really interesting fruit and herbal notes just under the surface, with great tobacco and chocolate notes. I get basil, rosemary, and apple on the mouth.

Sharp cherry nose. Complex but nondescript in the mouth with medium body and bright cherry fruit.
