"Our philosophy and stylistic direction with Chardonnay is to focus on the textural element of the palate rather than emphasising primary fruit characters. The cool temperatures in Marlborough work to retain fruit character and we want to use these characters to give more interest to the palate by fermenting warmer and using very natural techniques in our winemaking. This dry, white wine is from the Marlborough region and is made from native yeasts if you can believe it. This adds to the complex, rich character to this chardonnay and certainly puts it in the camp of a more southern Burgundy white than one from New Zealand.
