Sequoia Grove Cabernet Sauvignon Napa Valley 1992

Winemakers Notes: Winemaking practices: - Hand-sorted fruit - 1-2 day cold soak - Inoculated with an assortment of French yeast strains - Small batch fermentations - Pumpovers 2-3 times per day - Malolactic fermentation in barrels - Racked two times before bottling harvest will go down in history as one of the biggest harvests EVER seen at the Sequoia Grove winery, with tonnage up as much as 40% of average. Nothing in the weather patterns, nor even in early fruit estimates predicted the large crop. Luckily, quality is excellent and fruit came in perfect for the style that Sequoia Grove read more... is known for. The lower sugars from the cooler weather mean alcohols that are more in balance and the higher than normal natural acidity make a balanced wine with little manipulation needed. The long, cool growing season helped flavors develop beautifully and the large crop allowed us to have even more room to select only the best lots to make it into our blends. Fruit sorting and skilled winemaking decisions were especially important components of this challenging year. Acidity: 3.81 Alcohol: 14.2%% Appellation: Napa Valley Sub-Appellation: Napa Valley Deep red-black in color with intense notes of blackberry and cedar, black pepper and cinnamon with slight hints of currant and crème soda. The wine flows easily across the tongue and is silky and lush with a lingering note of cassis that goes on long after the wine is swallowed.

Deep, intense fruit and lively acidity, with a rich core of earthy currant, chocolate, cedar and vanilla, finishing with a long, tannic and complex aftertaste.
