Sebastiani Cabernet Sauvignon North Coast 2016

External Review by We Speak Wine:

Vineyards: This Cabernet Sauvignon comes from our best vineyard sites within Lake County and Sonoma County. The majority of the fruit comes from Lake County where volcanic, rocky soils and dramatic mountainside vineyards provide intense wines of structure and concentration. The remainder is from Sonoma County with a small portion from Santa Barbara County. The result is a synergy of intense flavors and distinction. Vintage: 2016 began with an early bud break and moderate temperatures throughout spring. The summer months were moderately tempered as well, with few heat spells and foggy evenings. Cooler temperatures in August resulted in increased hang times on the vines, and allowed the vines to ripen at a slower pace. We harvested the fruit from September 27 – October 28, 2016 at optimum ripeness. Winemaking: After a three-day cold soak, the grapes were crushed and fermented at relatively warm temperatures in stainless steel tanks. After pressing, each lot was blended or egg-white fined depending on flavor, color and tannin concentration. The wine was aged in 100% oak barrels: French, Hungarian and American. Small portions of Merlot, Petite Sirah, Cabernet Franc, Malbec, Zinfandel and Petit Verdot were added for balance, aromatics and flavor. Winemaker's Notes: This 2016 North Coast Cabernet Sauvignon is a showstopper of a wine. Bright ruby red in color, it opens with aromas of black cherry, coconut and Cabernet-spice. The palate is medium bodied and lled with juicy avors of blackberry, plum, currant and a toasty oak. Soft tannins intermingle with a hint of herbs on the persistent finish. Pair with your favorite grilled meats. – David Nakaji, Winemaker Composition: 75% Cabernet Sauvignon 8% Merlot 6% Petite Sirah 5% Cabernet Franc 4% Malbec 1% Zinfandel 1% Petit Verdot Cooperage: Aged in new and used French, Hungarian and American oak Alcohol: 13.5% TA: 0.60 g/100mL pH: 3.61

With over a century of winemaking experience in Sonoma, Sebastiani Vineyards & Winery focuses on crafting small lots of super-premium wines from the great growing regions of Sonoma County, becoming one of California’s most highly praised and awarded wineries for its Bordeaux and Burgundian varietals. With the spotlight on single vineyards and specific sub-appellations such as Sonoma Valley, Alexander Valley, Carneros and Russian River Valley, Sebastiani produces wine under the Sonoma County, Appellation Selection and Proprietary Selection designations. Founded in 1904 by Samuele Sebastiani, the winery is best known for its Cherryblock Cabernet Sauvignon, one of Sonoma County’s most coveted wines. The winery is located just blocks from Sonoma’s historic downtown plaza and offers historical tours as well as extensive picnic grounds and hospitality venues. Sebastiani is Sonoma’s only continuously-operated, family-owned, century-old winery. In today’s era of mergers and consolidation, it is particularly proud of its family heritage. In 2001, case production was significantly reduced to 100,000 cases per year: producing only one brand, Sebastiani, exclusively from the great winegrowing regions of Sonoma County. The fermentation cellars were rebuilt from the ground up, utilizing state of the art equipment which allows for gentle handling of fruit and must and fermentation of small lots of wine from specific vineyards and vineyard blocks. The resulting wines are receiving unprecedented critical acclaim and are in high demand. Growing production incrementally to meet demand without sacrificing quality, the winery’s current production is 300,000 cases a year. Sebastiani’s most famous wine, the Cherryblock Cabernet Sauvignon, is complemented by the highly acclaimed blended red wine Secolo, the limited production Appellation Selection wines and a line of Sonoma County varietals which offer extremely high quality and exceptional value.
