Sebastiani Cabernet Sauvignon Alexander Valley Appellation Selection 2012

Winemaker’s Notes: Medium to dark ruby red in color, this 2012 has beautiful aromatics of ripe cranberries and dark cherries with hints of vanilla oak and bergamot tea. Lively and rich flavors of blackberry and black cherry erupt on the palate, with caramel and vanilla oak being more prominent in its youth. It finishes with classic Alexander Valley terroir characteristics of tea and minerality along with tannins to reign in the fruit. Overall, it was an excellent vintage and should age very well. - Mark R. Lyon, Winemaker Vineyards: The Alexander Valley is located north of the town of Healdsburg in Sonoma County. It is one of the warmer AVAs in the region making it the perfect spot for red Bordeaux grapes. 60% of the Cabernet came from gravelly blocks with Clone 4, 6 and 7 from the Lyon Vineyard. It also includes grapes from the Vimark and Mtn. Terraces vineyards. Merlot was also from the Lyon and Mission vineyards. Vintage: 2012 was a long growing season with an abundance of high-quality fruit. Crop set was higher than usual for Cabernet, but the long and moderate summer weather enabled the grapes to ripen evenly. A warm, late September brought in enough heat to fully ripen Cabernet by early to mid October. We harvested the grapes September 29th – October 18th, 2012. Winemaking: After a three-day cold soak, we crushed and fermented the grapes at relatively warm temperatures in stainless steel tanks. After pressing, each lot was blended or lightly egg-white fined to remove green tannins. The wine was aged for 13 months, primarily in new and one-year-old French oak barrels. A smaller percentage went into Hungarian and American oak. Portions of Merlot and Malbec were added during the first assemblage for balance, aromatics and flavor. Composition: 91% Cabernet Sauvignon 4.5 % Merlot 4.5 % Malbec Cooperage: 13 months in new and one-year-old French oak barrels with a small amount of Hungarian and American oak Alcohol: 14.7% TA: 0.55 g/100ml pH: 3.83 ** Only 4 in Stock **
