- This wine is not for all palates. It's tangy with a flavor reminiscent of a fino sherry. For those enamoured with this type of Jura white wine, it's an emotional wine. The winemaker tops off the casks shortly after the veil of yeast has formed in order to not make the wine too affected by the flavor. We love it for it's history, it's character and so many reasons more.
