- The most interesting thing about the Assyrtiko that grows on Santorini, aside from the wines that are produced from it, is that the vines are trained in a spiral basket formation, which protects the grapes against the incredible heat of the island. Citrusy, minerally, and made accompany grilled octopus. This is a richer and riper style of Santorini white than many, but the citric acidity and the piercing minerality are pronounced and tame the wine's richness.
