Food Pairings for Santa Rita Reserva Shiraz
First Taste - Poured through an aerator, I was immediately confused by the bouquet. Overwhelming musty, basement smell, thought "corked" immediately. But then it opened up more and some oak rolled out with some other hints, including vanilla that barely came out. Color - Deep blackberry color. Taste, typical Cab Sav yet lacking the tannins. Not silky tannins but very light. I thought it was quite balanced and slightly acidic. Tart. I am going to give this one a day two try, but not a fan at first taste. WOW. After recorking and resting til the next time this wine really came into its own. The bouquet was alive and fruity, Black Currants jumped out onto the palette and the tannins were close to perfect. After reading other reviews of products of this vineyard I feel better now, this is just a wine you do not want to open and pour.

Rating 87 point. Very firm structure and good nose. This wine needs more time to develop. Keep and enjoy in 3 years. Tasted again in 2013 and now a rating of 90. Wine has developed and is much more even in taste with some tar like aromas and elegant nose. A joy to drink now.
My Rating 89. Complex nose with fruity but dry nose. Good balance with plenty of tannins and good complexity berries . Nice finish
Rating 87+ hard to tell still closed in. Firm body with plenty of tannins. Good complexity that needs time. Nose is light but very well balanced. Keep for a couple of years and enjoy. Price relationship very good $ 9.-
caramel and wood scents medium body, a bit tangy slight warm finish
Very fruit forward, almost a little jammy, New World style Cabernet Sauvignon. I tasted black currant and maybe some blackberry in the mix.

All vineyards are planted in vertical shoot position in order to obtain good sunlight exposure and airing. The crop is restricted to 7-8 ton/ha so as to get concentrated grapes. During the season, irrigation becomes a critical factor for this variety since it is very sensitive to water stress. The idea is to reduce water availability down to pea size to produce medium size berries and vigor control, then allowing the roots to feed the plant with enough water for good ripening, without any excess, while keeping a small growth of leaves at the tip of the shoots.
