Food Pairings for Santa Rita Floresta Cab
There's a lot going on with this wine! It is intriguing and complex. It's a dark ruby color with a nose that develops and changes over time. Upon pouring I immediately got green pepper on the nose but that softened with some air. Cedar, chocolate, blueberry, blackberry,a whisper of violet and some plum. Also has some earthiness and spice. Nice long lingering finish that makes you want to come back for more. Still great on the 2nd night. Probably would cellar well for another couple years at least.

WHY DID YOU DO THAT TO ME?!?"Me: "I told you it was terrible."Wife: "You didn't say how terrible. Somebody had a bad day at work and pissed in the vat. That's what this tastes like."Me: "But I warned you it was terrible. You wanted to try it."Wife: "No, you just said 'terrible.' You didn't say 'this is really really awful, and you don't want to taste it.' You just said 'terrible,' and with you that can mean a little too sweet, not this vile brew."Me: "But honey, sweetheart, I did say it was terrible."Wife: "You'll pay for this, you bastard. Maybe not tonight, or even tomorrow, but you'll pay. I promise."Me: "But sweetheart, I did say ... Oh, never mind. Sorry honey."Wife: "You will be."
A 'by the book' shiraz, a syrupy wine with a 'melange' of red fruits, plums, blackberries, some oak in the background and a long finish; the only drawback is the slightly alcoholic finish... a decanting would benefit...
Decanted 2 hours. Lots of sediment in this one, so pour with care. Nose of cedar wood and black currant. The palate is big fruit: blackberry and currant, with some fairly heavy tannins. Dry, tannic finish with berry fuit and some mild alcohol heat. This should definitely lay down for another year. Even with the decant, still very young. Very well structured however, and my first Chilean cabernet. Excellent - 88 points.Day 2: After sitting in the decanter overnight and all the next day, I tried this wine again. What a difference! The heavy tannins are mostly gone, as is the harsh cedar nose. Lots of smooth berry and currant fruit coming through. Still a tad tannic on the finish, but loads better than last night. I definitely recommend not cracking this one until 2009--at the earliest. Note: #49 in Wine Spectator Top 100 of 2007.
complex, earthy notes, dark berry flavors, chocolate; will become a regular purchase for me!
Sweet fruit taste, very light. Good for deserts...
Good value, perfect for a dinner party, not that I ever have any.

The 2004 Cabernet Sauvignon Casa Real is purple/black in color with a perfume of pain grille, mineral, scorched earth, black currant and blackberry liqueur that jumps from the glass. This is followed by an opulent wine with layers of savory fruit, es... Robert Parker. 92 Points Wine Spectator: `Very dense with espresso bittersweet dark chocolate dark currant and tar flavors buttressed by thick loamy tannins. Notes of tobacco and mineral flash on the finish which is muscular but supported by ample acidity. A brute now so cellar. Two other samples were flawed so beware bottle variation. Best from 2006 through 2011. 2000 cases made.`
