With its residual sugar well-judged to support the richness of orchard fruits and nut oils on the palate, its persistent lemon, chalk, and salt notes help provide counterpoint. Stephane Tissot's sparking cuvees of Chardonnay and Pinot remain among the finest traditional method sparklers for the money grown anywhere in the world.

Santa Cristina:
Santa Cristina is a popular brand offshoot of Antinori wines, produced in the town of Cortona, in Tuscany, Italy. The wine has been produced in the area (the location of the estate changed in 2006) since 1946. The wines are produced using traditional grapes and styles of red, white and rosé as well as Super Tuscan blends using international grapes. The estate also produces fortified dessert wine, grappa and olive oil.

From a small Champagne producer that has been certified biodynamic since 1999, this luxury cuvandeacute;e is produced from organically grown grapes. Matured in the bottle for several years prior to release, this is an expansive wine with rich, round ripe flavors and hints of almonds and hazelnuts, all balanced by an excellent mousse and a nice, refreshing finish.

With slightly yeasty notes and roasted walnut aromas, this well rounded sake has a rich mouthfeel. Dry and crisp, the flavors are dominated by mixed nuts, fresh cut green grass and other earthier flavors. Medium-bodied, the finish is lengthy and dry; a perfect food companion. - Brewery

Toast, honey, peach and citrus flavors come together effortlessly in this balanced, elegant Champagne. The fine mousse adds to the textural component, and this ends on a refreshing note. Drink now through 2010. 33,946 cases imported. -BS

Takantenjin Soul of the Sensei is a special Junmai Daiginjo brewed in memory of former Takatenjin Master Toji Shokichi Hase. Toji Hase worked tirelessly at the same brewery for over 40 years which in itself is surely an achievement worth honoring. He was also one of the four famous toji known as the "Four Guardians of Heaven" of the prestigious Noto Toji Guild. (Toji guilds are small groups of notable tojis whose main objectives are to educate and train successors, to refine skills, and to uphold and improve the reputation of the sake from their region.) The brewery continues its former senseis traditions with this clean, dry and rich brew which is considered one of Japans most highly regarded sake. Aromas of clean honeydew rind, grainy rice with a touch of earth. The impact on the palate is soft and rich but not cloying. A gentle sweetness envelops the tongue while the clean, high-strung acidity does the work. It has loads of body but is able to maintain tightness and structure. ...

From the Côreau de Pizy comes this ever so slightly off dry pink sparkler made from the Pineau D'Aunis variety. Full of watermelon and strawberries on the nose and palate.

A sparkling (yes, sparkling) known as 'Champagne' saké in Japan. Rich, intense aromas of buttermilk & chestnuts. An apéritif for the adventurous!
