Suggested Recipe Pairing presented by
Layered Rice Pudding

RiceSelect's fragrant Jasmati® is blended with eggs, milk and fall's favorite spices, cinnamon and nutmeg, to create a delicious rice pudding, which is layered on top of fluffy cream cheese and abuttery pecan crust. Pairs well with a bold, tawny port with flavors of dried fruits, nuts, and spices.

Probably the best Champagne I have ever drank, the toasty complexity and the exceptionally fine bead produce an outstanding drinking experience

I love champagne a lot, and Salon is my personal star. This super complex laser high acid wine when they are young, perfect with hot asian food or some nice fat cheese. My best vintage is from 1964 in 1981, it was not even expensive. General with all Champagne, let them take the air for 2-4 hours, they need it for the balance of the flavors. Expensive, yes but in my opinion it´s worth the money. Salon is rare and unique only 37 vintage in one century i think, and you lives only one.......

An enormously complex and rich wine that almost defies description. Golden apples, raisins and pears; bread, cream, vanilla, honey and nuts. The list goes on and on. Full and rich; the mousse is extremely fine and creamy-textured in the mouth. Drinking beautifully now, it will probably hold another ten years or more. Even better than a bottle reviewed last year.

Salon is Champagne perfection-elegant, complex, powerful and only from the best vintages. Driven by a dedication towards greatness, Salon stands alone in Champagne.

Brilliant stuff. Vinous, with a patina of nutty maturity offset by a citrus- and honeysuckle-tinged freshness, all embraced by a taut, silky structure. The best is the finish, a kaleidoscope of biscuit, fig and walnut that goes on and on. Drink now through 2004.

The latest release from Salon, this just explodes in the mouth with mineral, steel and flint. The tiny mousse has flavors of yeast and just a touch of toast. It is rich, but so austere and structured. Like many Salon Champagnes, this will age for 20 years or more.

Light yellow with a slow bead. Deeply perfumed nose displays waxy orchard and pit fruit scents, along with toasty lees, woodsmoke and wet stone. Weighty pear and yellow peach flavors are given a bitter edge by fruit skin and quinine qualities, picking up salty minerals on the back end. Finishes with firm grip and powerful echoes of minerals and pear skin. This is already beginning to show complexity.

The light gold color is enhanced by a particularly strong mousse. A primary, vanilla bean aroma arises from the glass. Extremely full and potent on the palate, meaty, muscular, and surprisingly well balanced for all its powerful fruit. At the moment, the fruit and acidity have not evolved, remaining somewhat blunt and searingly austere. But the wine is clearly top quality, and should rise into a higher state of grace with time.

The 1997 Brut Blanc de Blancs Le Mesnil possesses striking detail and depth in a surprisingly generous style for this wine. An inner core of perfumed varietal fruit emerges from the glass, along with expressive aromas of smoke, minerals, mint, flowers and licorice, all of which are woven together with extraordinary elegance. The finish is long, sweet and sublime. Everything about this wine speaks to elegance, but in 1997 Salon is also a pleasure to drink young, unlike the 1996 which remains painfully backward. Anticipated maturity: 2008-2027.
