Food Pairings for Salmon Run Riesling
Vinification: The grapes were picked middle October after a moderate Summer and a cool Fall season. The grapes were crushed, pressed and the juice was cold settled. The wine was all fermented in stainless steel tanks at low temperature to preserve the fruit aromas. After fermentation, the wine was allowed to settle in the tanks over the Winter before blending and filtration. Description: This Riesling displays all the characteristics that have made the reputation of the Finger Lakes Riesling: mineral character, steely acidic backbone, floral elements and pear/apple notes. The finish is left off-dry to make this a wine that can easily be paired with food at the table and also enjoyed on its own. Analysis: Alcohol: 11.9 % Acidity: .62 g/100 ml pH: 3.30 Sugar: 1.4 %
