Saints Hawke's Bay Sauvignon Blanc 2007

Winemaker's Notes:

Fermentation notes: The fruit was fermented at cool temperatures in stainless steel tanks. Selected yeast strains were used to maximise the different flavour profiles of the fruit. Maturation notes: After fermentation the wine was taken off yeast lees to maintain the freshness in the wine and to maximise flavours and depth of palate. The wine was lightly fined and stabilised before bottling. Other comments: The Saints Sauvignon Blanc style is to be up-front and aromatic, balancing crisp acidity with concentration of flavour.
