- The Syrah is all Durell #1 selection, which is known for being less fruity and more of a meaty/spicy selection. It is 80% whole cluster fermented in 4-ton open top fermenters using all wild yeast for both primary/alcoholic fermentation and secondary/malo-lactic fermentation. The oak is all French and 45-50% new. It is bottled both un-fined and un-filtered. Smoky violet and chocolate blackberry aromas fill the nose. The palate is smooth and very ripe with graphite, violet and blackberry/blueberry
