Food Pairings for Rubicon Estate Cabernet Franc
Cabernet Franc is a wonderfully aromatic varietal and great care is taken to extract its opulent character. The grapes were crushed into small five-ton fermenters and left to cold soak prior to fermentation. Once fermentation began, the temperature was kept low to maintain the delicate fragrances of allspice, clove, and raspberry. Before the must was fully dry, the pressed wine was separated from the free run juice and racked into French oak barrels for 20 months of cellaring.
