My review of 1998 Rubicon Estate CASK Cabernet Sauvignon. The wine stands out with the 1800 style label printed on thin cork. Niebaum Coppola first made the CASK Cabernet Sauvignon in 1995 as a wink and a nod to the hearty Inglenook Cabernet Sauvignon. CASK Cabernet is made from 100% organic Cabernet Sauvignon grapes grown in the storied Rubicon Estate vineyards, Cohn and Chateau, in Rutherford, Calif. These vineyards first started producing fat Cabs in 1871. CASK is aged for 28 months in 500-L American oak puncheons to round out the hearty fruit. We recently visited Rubincon Estate in Napa Valley and had a chance to taste this fabulous Cab. We had visited numerous wineries and were quite suprised at the impression this made on us even though it was late in the day. Deep rich flavors with complexity and not too stringent on the tannins.

Rubicon Cask is their finest expression of 100% Cabernet Sauvignon from this historic estate in Rutherford. Originally the Niebaum estate, wine grapes have been grown on this property since the 1800's. Grapes for this wine were sourced from two vineyards, the Cohn and the Chateau, right in the Rutherford bench. Wine Enthusiast Magazine scored this 95 points saying "Gorgeous, elegant and ageworthy. With a softly tannic structure, it’s drinkable now, but should age and gain complexity for 10 years. Dry and smooth, it has complex flavors of blackberries, black cherries, currants, red licorice, cola and oak. Give it some time to breathe. Now–2017."

A rustic, rough-hewn, full-bodied young red, with chewy currant, dried and wild berry, mineral, sage and cedar notes. Gains a suppleness on the finish that bodes well for the future.
