Harvested from vines grown on the Baxendale’s vineyard on the Whitlands hills, the plump fruit had high natural acidity, with ripe gooseberry and herbaceous notes and the must was fermented cold to retain the vibrant intensity of fruit aroma. The depth and liveliness of the flavours on the palate are matched beautifully by the tang of the wine’s acidity.
