"The 2005 Edmond de Rollat Cabernet Sauvignon is made up of 75% CabernetSauvignon, 20% Merlot, and 5% Cabernet Franc aged in 70% new Frenchoak. It offers a more saturated color, a slighting brooding perfumewith elements of pain grille, earth notes, and an amalgam of blackfruits. Layered, with superb depth and grip, the wine is reminiscent ofa top level Pauillac. The wine has enough structure to develop for another4-6 years. The finish is long and fruit-filled. Drink it from 2012 to2025. Bowin Lindgren is the man behind Chateau Rollat Winery.His consulting winemaker is Christian LeSommer. Edouard Rollat came to America in 1903 with his lovely wife, Sophie, and their young daughter, Ida. Edouard was an imposing figure, standing six feet two inches tall and weighing well over 200 pounds. He was a serious, stately man who almost always wore a suit and either a straw hat or bowler. Edouard Rollat came to America in 1903 with his lovely wife, Sophie, and their young daughter, Ida. Edouard was an imposing figure, standing six feet two inches tall and weighing well over 200 pounds. He was a serious, stately man who almost always wore a suit and either a straw hat or bowler. His mustache was neatly cropped and groomed. Sophie was a soft spoken person of elegance and grace. She had long, flowing hair which she wore swirled atop her head like a large cinnamon roll. They emigrated from central France and western Switzerland where their family had made wine for many generations. A classic American story for the time, Rollat began plying his trade in New York where their ship had arrived. He quickly rose in stature and position to become the wine steward/sommelier at the prestigious Café Martin on 27th St. Throughout his adult life, Rollat was a prominent figure in the New York City wine business. In 1920, when the Eighteenth Amendment established Prohibition, Rollat’s beloved wine cellar at Café Martin was closed and became an orange juice warehouse. He maintained his connection with the wine business by writing, teaching, and speaking about great wines and wine making. In 1933 with the repeal of Prohibition, Rollat joined the Vendome wine house as its leading wine authority. He continued to consult for restaurants, write articles and teach. Edouard Rollat died in 1940 having established himself as one of the great wine authorities of his time. Read less

Aromas of black cherry and herbs, with a brooding soil pungency and very suave use of oak. Richer, denser and more energetic than the regular bottling. This one boasts greater sweetness of fruit but it also has terrific acidity and comes across as tightly wound today. Finishes very long, with a succulence achieved by only a handful of Washington State cabernets. These two wines are made entirely from Walla Walla fruit, from the Pepper Bridge and Seven Hills vineyards.
