Suggested Recipe Pairing presented by
Layered Rice Pudding

RiceSelect's fragrant Jasmati® is blended with eggs, milk and fall's favorite spices, cinnamon and nutmeg, to create a delicious rice pudding, which is layered on top of fluffy cream cheese and abuttery pecan crust. Pairs well with a bold, tawny port with flavors of dried fruits, nuts, and spices.

Originally vinted in 1809 for Tsar Alexander II of Russia, 200 years later it is still the ultimate Champagne; an icon of luxury, style and taste. Robert Parker raved about this 2004, scoring it 97 points and saying "The 2004 Brut Cristal has put on quite a bit of weight since I first tasted it earlier this year. It is a powerful, structured Cristal layered with considerable fruit. Chardonnay seems to play the leading role in 2004, at least today. Cristal is often accessible young, but that is far from the case here. This is a serious, painfully young Cristal that will require considerable patience. Readers who are willing to spend some time with the wine today will find a super-impressive, complete Cristal. The 2004 Cristal is 60% Pinot Noir and 40% Chardonnay."

A favourite amongst the rich and famous. Cristal is the jewel of the House of Louis Roederer, first created in 1876 for Tsar Alexander II. This really is champagne at its finest, as inspiring today as it has always been; the embodiment of elegance, beauty and purity.Cristal is made according to the strictest criteria, based on a strict process of selection applying to the vintage, the cru, the village, the grapes and finally the wine. Only Pinot Noir and Chardonnay grapes from the Houses 10 most celebrated crus are used in the production of this legendary cuvee. Vintage: 2002 Colour: Beautiful yellow in colour with burnished gold reflections. Bouquet: Intense nose of white flowers, citrus and red berries, followed by warmers notes of toast and wood. Taste: Ripe lush fruits (peaches) and toasty flavours. Dense fleshy structure. Powerful finish. Aged: An average of 5 years on lees, plus 6 months after disgorging. Grapes: 55% Pinot Noir, 45% Chardonnay. Serve: Aperitif, caviar, fish, lobster

Exceptionally rich and dense, an exceptional wine that reveals itself in layers, from the first fruit attack to the mineral texture and the way it gradually fills the mouth. Selected from old vines, there is a great flavor in this wine, with the promise of many years' aging. Cellar Selection.

Winemaker's Notes:

"A pale beauty with delicate power, energy and dimension, the 2004 Cristal is an impressive follow-up to the 2002. Scents of apple blossom hint at the depth and clarity of the fruit, layered with ginger and spice in a flavor delivered over the course of several minutes. The freshness of the wine comes through in a subtle hum rather than anything as overt as a buzz; bright, airy and unstoppable." --Wine and Spirits Magazine*Wine and Spirits Magazine rated 97 pts.*
