Food Pairings for Robert Mondavi Winery Woodbridge Lightly Oaked Chardonnay
As soon as the grapes arrived at the winery, we gently pressed the clusters to capture the intense flavors without extracting bitterness. We cool-fermented the juice at 50˚F in stainless steel tanks to emphasize the fresh fruit character, then aged a small portion of the wine in French oak to enhance its silky texture. To complete the wine’s flavor profile, we blended in several aromatic white varieties.
Our 2009 Lightly Oaked Chardonnay is a lovely, aromatic wine. On the nose, rich floral notes give way to a pleasant mix of green apple, apricot, and honeydew melon. The fresh melon character persists on the palate, accented by a touch of lemon cream. Every effort has been made to preserve the wine’s pure, fruit-focused expression by using minimal oak, though a portion of the wine is briefly oak-aged to enhance its smooth texture. Stylish and fruit-driven, this is a very versatile Chardonnay. Enjoy it paired with grilled fish tacos, Thai chicken skewers, or angel hair pasta tossed with shrimp, lemon, and herbs
