Food Pairings for Robert Mondavi Winery Cabernet Sauvignon Napa Valley
Unbelievable. This is a hidden and forgotten gem of the old line Mondavi way. This is a statement of the strength and character that Robert Mondavi believed and proved existed in Napa. I purchased another case to continue to enjoy the aging of this vintage. I last had it in the late 90's and then again a week ago. Buy it and drink it up now!

An enormously complex and sophisticated wine that combines great flavors with uncommon finesse. Dark, sleek, rich and polished, it has a delicious core of concentrated cola, currant, plum and blackberry, and a tremendous finish. Best from 2004 through 2014. Tasted twice, with consistent notes.
Supple and rich, bursting with ripe fruit in a generous style, with beautifully focused black cherry and currant flavors that are lively and elegant, tannins in the background, very fine texture and flavors that linger long and full on the finish. Great harmony, delicacy and toasty French oak. Drink 1992-2000.
If you missed out on Robert Mondavi's 1991 Cabernet Sauvignon Reserve, try to find a few bottles of the sumptuously rich, decadent, showy 1992 Cabernet Sauvignon Reserve that is about to be released. It is a sweeter, riper, more unctuously-styled Cabernet. While it may lack some of the classicism of the 1991 Reserve, it is s super-rich, full-bodied, flamboyant, unctuously-textured wine that should drink well for 20+ years.
A firm, tight, tannic baseline forms the foundation for this intense, rich and concentrated wine, with a mix of currant, cedar, sage, and dusty berry. Well-balanced, with chewy tannins, it's an elegant, well-crafted wine. Best from 2004 through 2011. Tasted twice, with consistent notes.
This flagship wine shows impeccable balance and finesse. It's well put together, as the couture people say, and drips with lavish, minty French oak. Soft tannins add interest as well as ageability. The wine is not lavishly fruity; instead, the flavors are consciously restrained and subtle. Very high quality, and worth holding through 2010
One of the ripest, highest alcohol Mondavi Reserve Cabs in memory, this wine is forward in cassis and cherry flavors, and while the tannins are pretty sturdy, it's sweet and soft enough to drink now. It definitely has the rich mouthfeel you want in a pricey Napa Cab. But it's young; cellar this one until at least 2010.
The 2004 vintage was the very last in which the Robert Mondavi family was involved with the winery, and it produced the best Mondavi Reserve since the 1996. Comprising 86 percent Cabernet Sauvignon with Cabernet Franc and Petit Verdot, this is a sensational wine from a classic vintage in Napa Valley. Winemaker Genevieve Janssens has brought new luster to this Napa stalwart, and the winery still has access to some of the valley's top Cabernet vineyards.
The Reserve candidates receive the finest, most labor-intensive winemaking techniques and highest percentage of new oak barrels of any of our wines. We gently crushed the grapes and fermented the must with a combination of cultured and native yeasts for greater complexity. Extended skin contact, totaling 32 days, naturally softened the grape tannins and enhanced varietal intensity. The wine underwent a long malo-lactic fermentation in barrels to soften acidity and give roundness on the palate, followed by more than 19 months of aging in small French oak chateau barrels. Because of the richness of this Reserve wine, we selected 90% new French oak barrels. Six barrel-to-barrel rackings and a light egg white fining gently developed and clarified the wine during aging. We bottled the wine unfiltered to retain the rich texture and complex flavors. Fermentation temperature: 85° F.; fermentation length: 5 to 7 days; skin contact: 32 days; Time in French oak chateau barrels: 19.5 months.
The wine is powerful and concentrated, yet elegant and supple. Beautifully articulated flavors of cassis, ripe berry and spice lead to a long, velvety finish. This is a wine to lay down for aging -- it has the structure and depth of flavor to reward cellaring. Yet, even in its youth, our 1993 Reserve Cabernet Sauvignon is balanced and delicious.
Notes: 90% new French oak barrels
