What to Expect
Sauvignon Blanc is a refreshingly crisp white wine that offers citrus and tropical fruit flavors with very aromatic notes of green chilies, grass, herbs, asparagus and gooseberries commonly contributing to the bouquet. Sauvignon Blanc is generally unaoked allowing the fruit to shine and highlighting the delicacy of the grape.

Tim Mondavi describes our Napa Valley Fumé Blanc as a selection of vineyard personalities that creates a choir of flavors; no vineyard flavor dominates, but each contributes to the wine’s complexity. For thevintage, we selected grapes from mid-valley vineyards, primarily from the Stags Leap District, Oakville and Rutherford AVAs (American Viticultural Areas). Sauvignon Blanc is very sensitive to cultivation techniques, and we are able to influence its myriad of flavors in the vineyard with clonal selection, state-of-the-art vertical trellising and canopy management. Robert Mondavi pioneered barrel aged Fume Blanc, and still makes one of the best there is. Vibrant notes of citrus, pineapple, flowers, minerals and lemon grass in our Napa Valley Fume Blanc. Barrel-fermentation and gentle stirring during aging in French oak barrels enhanced the elegant texture and lingering, spicy finish. Sip this refreshing wine as an aperitif or with a variety of delicate or spicy foods. Our associate winemaker, Richard Sowalsky, especially likes this Fume Blanc with garlic-infused dishes, such as fettuccini with rock shrimp and garlic, or Tuscan roast chicken with garlic, lemon and herbs.
