- Enticing layers of melon, pear and spice, with elusive layers of lemon grass, highlight our 1997 Fum' Blanc. The pure, focused flavors have complexity from barrel-fermentation and sur lie (on the yeast) aging. Refreshing and versatile, our Fum' Blanc can accompany both delicate and spicy foods. Grilled halibut with herbal butter, spicy chicken and avocado salad or potato, leek and sorrel soup are a few excellent pairings with Fum' Blanc. It is also a wonderful wine to serve with appetizers, especially cheeses. Our favorite is Fum' Blanc with fresh or aged goat cheese.

- Each layer of flavor in our 1998 Fume Blanc Reserve reveals a complex expression of the terroir of our To-Kalon Vineyard. Made exclusively from grapes grown in this historic vineyard on the Oakville Bench, our Fume Blanc Reserve unfolds with layers of tropical fruit, exotic spices and flower-scented tea. Complex notes of ripe guava, quince, star anise and honeysuckle weave through the silky flavors. Our Reserve is entirely barrel-fermented and hand-stirred during sur lie aging in French oak, resulting in a deliciously rich texture and long, lingering finish.
