What to Expect

California's Napa Valley has been a source of world-class Cabernet Sauvignon for well over a century. Its warm climate and varied terrain allows for many styles of wine. One thread that runs through almost all the Cabernet based wines from Napa is their lush, ripe full-bodied feel and rich flavors of currant and berry. Wines from the valley floor, particularly around Rutherford, are famed for a dusty quality and those coming from the hillsides surrounding the valley, Mt. Veeder, Diamond Mountain and Howell Mountain for example, tend to be a little leaner with more obvious structural elements.

• Hand-sorted on tables in To Kalon Fermentation Cellar
• Gravity-flow movement of must and wine
• Fermented in traditional oak tanks and gently pressed in a traditional basket press
• 35 days extended skin contact (maceration) for softening of tannins
• 18 months (539 days) aging in French oak château barrels, 75% new French oak barrels

Velvety flavors, full of blackberries, currants and warm spices highlight our Coastal Cabernet Sauvignon. Grapes were harvested from vineyards in Californias North Coast appellation. The complex interplay of aromas and flavors in the wine come from these vineyards which are rooted in varied soils. Winemaker Ken Shyvers carefully selects the grapes for our Cabernet to ensure rich, ripe character with soft tannins. This means that you will be enjoying a very approachable wine.

Rich layers of cassis, boysenberry and black cherry slowly unfold in our Robert Mondavi 1998 Cabernet Sauvignon Reserve. Intriguing nuances of spice, cedar forest and licorice heighten the wines complexity. The excellent structure, with broad, muscular tannins and a long, velvety finish, promises even greater development with bottle aging for 15 or more years.
