What to Expect

California's Napa Valley has been a source of world-class Cabernet Sauvignon for well over a century. Its warm climate and varied terrain allows for many styles of wine. One thread that runs through almost all the Cabernet based wines from Napa is their lush, ripe full-bodied feel and rich flavors of currant and berry. Wines from the valley floor, particularly around Rutherford, are famed for a dusty quality and those coming from the hillsides surrounding the valley, Mt. Veeder, Diamond Mountain and Howell Mountain for example, tend to be a little leaner with more obvious structural elements.

• Hand-sorted on tables in To Kalon Fermentation Cellar
• Gravity-flow movement of must and wine
• Fermented in traditional oak tanks and gently pressed in a traditional basket press
• 35 days extended skin contact (maceration) for softening of tannins
• 18 months (539 days) aging in French oak château barrels, 75% new French oak barrels

Nuances of spice, cedar forest and licorice lead to rich layers of cassis, boysenberry and black cherry which slowly unfold on the palate. The wine is complex with broad, muscular tannins, excellent structure and a long, velvety finish.

Our 1995 Cabernet Sauvignon epitomizes the rich character and soft, approachable tannins of the vintage. With the seasons long hang time the small berries reached the desired state of ripeness where the tannins become very soft and supple.
