Winemaker's Notes:

WINE: "This wine is a new addition to our range of biodynamic wines. In the past the Syrah was blended together with Cabernet Sauvignon, Merlot and Cab franc to make up the Cornerstone blend. We felt that the wine has such subtle and beautiful spice, pepper and perfumed aromas which were lost once blended with Cabernet Sauvignon, that we decided to keep the wine and bottle it separately as a Syrah." "Bright fruit flavours with an aniseed spice and white pepper dominate the nose. A linear palate shows freshness with focused and slightly austere tannins." "No added enzyme, yeast and bacteria were used in the making of this wine. 50% of the grapes underwent a submerged cap fermentation without a single pump-over and or punch down during the fermentation process. The remaining 50% of the grapes were fermented on broken whole clusters. The wine spent 14 month in used French oak barrels." -Winery
