Production Area Central Valley Grape Varieties 90% Carmenere, 5% Cabernet Sauvignon, 5% Syrah (all certified organically grown grapes) Vinification After being cold macerated for a week, the grapes are fermented at 75-82° F. Fermentation concentrates on extracting the maximum fruit and building a structure that can withstand ageing. Post fermentation, the wine is aged in French oak for 8 months.
