Ackerman then passed the company down to his son, Louis Ackerman, who kept the tradition of fine winemaking in the family for generations. Remy Pannier has built three state-of-the-art wineries in the premier Loire Valley wine districts of Anjou, Touraine and the Pays Nantais where all their Loire Valley wines are vinified. Production Area The vineyards of Vouvray are planted on a plateau on the north bank of the Loire River. Clay and gravel are common in the topsoil; chalk forms the subsoil, and the small valleys in and around the town of Vouvray are riddled with caves and cellars. Grape Varieties 100% Chenin Blanc Vinification Rigorous low yield control (50-60 hl/ha). Grapes are picked at optimal maturity, and bunches are pressed immediately, followed by low temperature fermentation to preserve tropical fruit flavors and aromas. The juice is protected with CO2 and does not undergo malolactic fermentation. Aged on the fine lees to obtain a rounder texture and stored in stainless steel tanks until bottling maintains the freshness, minerality, and purity of the Chenin grape. Color Bright gold Bouquet Richly fragrant with hints of ripe pear, honey and brioche Taste Harmonious and delicately sweet, with flavors of green apple underscored by honey nuances. Round and refreshing, with lime, almond and hints of spice on the finish.
