2001 Cabernet Sauvignon Walla Walla Valley Technical Information Vineyards Spring Valley, Pepper Bridge, Seven Hills Vineyard Blend 80% Cabernet Sauvignon, 10% Cabernet Franc, 10% Merlot Cooperage 88% French oak, 10% Russian oak, 2% American oak (35% new oak) Bottled August 2003 pH 3.7 Total acidity 0.64 g/100ml Cases Produced 961 Tasting Notes The 2001 Cabernet Sauvignon from the Walla Walla Valley has a nose of chocolate and nutmeg finished off with mild cedar spice. On the palate, juicy dried black cherry fades to plum and cassis, melded with coffee and dark chocolate. A very well balanced wine with well-integrated tannins. Sweet toasted oak with dirty earth on the nose. Perfectly balanced mellow black cherries with a lean toward plums and a slightly sweet long gentle finish. This is some great stuff.
