A luscious Australian Shiraz with pepper and plum flavors, smooth tannins and a great finish.
Redgate picks its Shiraz when the grapes start to shrivel and the bottom leaves start to drop from the vines. At this stage the grapes have a high concentration of flavor and thick chewy skins, which add density and color in the finished wine. The wine ferments for six days, during which time the wine is mixed by hand for maximum color and flavor extraction. The wine is then aged in French and American oak for 24 months before bottling.

A deep, dark, inky red color leads to a bouquet of ripe plums and mulberries with hints of white pepper. In the mouth, big, luscious flavors of blackberries, raspberries, plums and mulberries abound, balanced with smooth tannins, and culminating in a powerful finish. The wine is ready to drink now, but can be cellared through 2011. The oak and power make this a great food wine, serve with barbecue, roasts, game, and stews.

Smooth with medium tannins. Quite peppery, but filled with dark fruits.
