Food Pairings for Ramos Pinto Collection
A top class producer of ruby port, tawny port and table wines. Ramos was purchased by Louis Roederer in 1990 and is built (like the Champagne) on quality. Crucially Ramos is only available through independent wine merchants and the on-trade. This combines the fresh, romantic spirit of the old Bom Retiro vines and the hot, sturdy ripeness of Quinta de Ervamoira. The grapes that gave birth to this wine were selected and picked by hand into small containers. They were then vinified in granite tanks and stainless-steel vats. French oak barrels were used during malolactic fermentation. After that, 40% of the wine remained in barrels and the rest went to age in two and three-wine casks for 18 months. It was bottled in June 2008. The appearance of this 'Pinto Collection' is clear and gleaming, with a dark red colour and garnet reflections.It has a surprising, expressive bouquet, starting with exotic aromas of spices and rock-rose that gradually turn into the sweet scents of ripe fruits, vanilla and cacao. On the palate, its attack is full of volume and freshness, showing its aromatic complexity. The wine has a long, elegant finish that associates a velvety structure with balanced acidity. This wine is good for serving with meals, as its acidity and expressiveness make it very elegant. We particularly recommend it for braised, roast and grilled meats and strong cheeses.
