All of our vineyards in Paso Robles are located on the west side of highway 101. Erich believes this area of limited water, shallow, rugged, rocky, calcareous soils will produce some of the finest wines in Paso Robles, and among the finest in California. Erich planted his vineyards precisely throughout the Paso Robles appellation to take advantage of the unique micro climates and soil characteristics that would best suit each grape variety.

Our Paso Robles Estate Grown Chardonnay is a premier Chardonnay produced by Rabbit Ridge winery. The grapes were harvested and immediately pressed at very light pressure without skin contact and the juice was then cooled to 45 degrees and racked to barrels after two days of cold settling. This Chardonnay is produced from fruit grown on our Live oak vineyard. The wine is composed of five different new Entav clones of Chardonnay and has a very significant limestone influence. Aged in 50% new Francois Freres French oak barrels, this wine was malolactic fermented and bottled with only a light filtration as opposed to a sterile bottling as many wineries DO.
