Suggested Recipe Pairing presented by
Coconut Rice Sweet Potato Cheesecake

RiceSelect's creamy Arborio gets blended with sweet potato, coconut milk and vanilla to create this decadent cheesecake. Pairs well with Saunternes; a white dessert wine that has hints of coconut from aging in oak barrels.

The N.V. Fine Muscat offers the most complexity of this hedonistic trio. Dark amber-colored, it delivers flavors of toffee, caramel, brown sugar, and dates. It is well balanced and has a long, pure finish.

Initial sweetness and raisiny flavors linger to reveal complex hints of honey and lemons. Some rancio character. Underlying structure of tannin and well-integrated spirit. Finish is long and the flavors return and linger.

Green-tinged brown color. Intensely perfumed bouquet shows a strong spicy character and scents of orange peel, clove, nutmeg and brown sugar. Deeply sweet but not excessively thick, avoiding any syrupy character. Zesty orange peel and spices on the palate, with sweeter pit fruit and caramel notes on the back end. Impressively vibrant for a fortified wine, with strong finishing spiciness and a hint of bitter orange.

My apologies in advance to those who canrsquo;t find this luscious fortified Australian dessert wine. Only the top wine stores are likely to get an allocation. But those who to locate a bottle will taste an incredible bargain mdash; a wine that exceeds the complexity and richness of some of the worldrsquo;s most famous nectars. It offers intense flavors of orange, honey, caramel, lemons, cloves, cinnamon and nutmeg. Its smoothness is off the charts. Serve it with roasted nuts or baked apple, or just enjoy it by itself.
