Winemaker's Notes:

Soil: Grown in old terraced decalcified vineyards with stony schistose and quartz acidic soil with scant organic matter.<br/><br/>Vinification Length: 20 days<br/><br/>Vinification Method: A blend of non crushed Syrah and Mourvèdre grapes are placed in a vat and allowed to ferment at a controlled temperature. This method draws out the finest qualities of the grape sin order to obtain a concentration of flavours and tannins. The quintessence of the juices held in the wole grapes is freed when the wine is pressed.<br/><br/>Vinification Temperature: 25°C<br/><br/>Malolactic: yes<br/><br/>Alcohol Percentage: 14.2 %<br/><br/>Sugar Rate: 0-5 g/l
