Food Pairings for Primus Veramonte
Really awesome when first released, so much so that I remember it in 2010. Rich, perfectly balanced fruit and tannin, lovely smooth mouth feel, and long fragrant finish. One of the few California cabs I really like - with properly balanced tannins so that you don't feel like you're chewing on barrel innards.

The Cabernet Sauvignon offers up a briery, cedary, tobacco leaf-tinged black currant fruit flavor in a medium-bodied, slightly oaky style. There are 100,000 cases produced of this reliable, but unexciting red. Robert Parker's Wine Advocate. A Cabernet Sauvignon wine from California in USA. 2001 Franciscan Cabernet Sauvignon Oakville Estate 750ml
The 2001 Magnificat is a blend of 70% Cabernet Sauvignon, 29% Merlot, and 1% Petit Verdot. It displays more force, depth, and delineation than the 2000, in addition to copious quantities of toasty oak, sweet, chunky, chocolaty, black currant flavors, and a medium-bodied, easy-going personality. It should drink well for a decade.
Surprisingly tannic and closed for an rsquo;01 Napa, but this may be a stylistic decision. Itrsquo;s a very fine wine, well balanced and rich in oak and blackberry-cherry fruit. Totally dry, but those tannins really lock up the flavors. Best after 2010.
A Napa claret, this blends cabernet sauvignon (70 percent) and merlot (29 percent) with a hint of petit verdot. The winersquo;s austere red fruit has a tartness that almost pales to peach. Tannins darken it, while the firm, lovely fruit persists, weighted for roast veal or the dark meat of game birds.
Franciscan Cabernet Sauvignon is a quintessential Napa Valley Cab. The season provided the ideal combination of cool evenings and warm-cool days. Allowing a slow, even ripening that let tannins, sugars and flavors develop in unison. The result of this long hang time is a wine with supple tannins, complexity, intense flavors and excellent overall balance. Appearance: Ruby red Aroma: Aromas of rich chocolate, coffee, and cassis with notes of mixed dark fruit and raspberry. Flavors: Extraordinarily rich and mouth-filling, with flavors of cassis, coffee and toasted oak that grace a well-structured body, full of texture with ripe, supple tannins on the lingering finish. Varietal Composition: 89% Cabernet Sauvignon, 10% Merlot, 1% Petit Verdot Appellation: Napa Valley Oak aging: 18 months, French and American oak, 31% new Alcohol: 13.5% Release Date: October 2005
