Ponzi Vineyards Pinot Noir Abetina(1998)
FERMENTATION: Juice was fermented up to 90 degrees in small 300 gallon open fermenters. It was treaded and manually punched down twice a day during fermentation. The wine was lightly pressed and gently moved into French oak barrels, 50% new. It was left alone to age for nearly 17 months—then gravity fed to the bottling line and held in the bottle for an additional 11 months before release. No filtration and unfined.
