Wine Advocate Review Rated 99 The virtually perfect 2007 Cabernet Sauvignon Reserve (94% Cabernet Sauvignon and 6% Petit Verdot) does indeed recall those great Villa Mt. Eden Cabernets of 1974 and 1978. An inky/purple hue is accompanied by a provocative aromatic display of blackberries, blueberries, cassis, spring flowers, and graphite. The wines extraordinary purity, unbelievable density of fruit, and full-bodied mouthfeel result in an awesome Cabernet Sauvignon that should drink well for three decades or more. This modern day legend is the finest wine to emerge from the Plumpjack winery. Bravo! Wine Tasting Notes Our 2007 PlumpJack Reserve Cabernet Sauvignon (94% Cabernet Sauvignon and 6% Petit Verdot) exhibits explosive aromas of blackberry, black cherry and bakers chocolate. These aromas are followed on the palette by flavors of black currant, blackberry pie filling and raspberry cordial. The finish is dense, sweet and expansive. This wine is the best of what our 40 acre estate vineyard has to offer.
This is an elegant monster requiring patience on the palate and airing of at least an hour and a half. The nose opens to a luxurious array of dark berries, cherry, coffee, dark chocolate, earth, tar, graphite, and pepper. At uncorking, the palate launches tight and hot, but full of promise. At two hours, the wine blooms into a gloriously layered palate, with dark fruits, mainly blackberry and blueberry but also prunes, joining cafe latte, dark chocolate and crème brulee in the center, followed by a peppery finish framed by a vegetal edge, with pomegranate and cassis showing intermittently in the lengthy, luscious, lively fade. Tannins show durability and strength, but increasing subtlety, blending harmoniously into a fully structured mouthful of rich flavors and zesty sensations. A peppery mouthfeel sustains in the back as the palate dries in the front. A quiet but savory acidity adds tang to the top and supports the intermingling of fruits and spices in the center, including vanilla, mocha, honey and pepper, throughout a lengthy, focused, sumptuous, and harmonious display. At three hours, the wine integrates and becomes smoother, then even more elegant, if slightly less powerful, thereafter. This awesome wine shows best between 1 ½ and 2 ½ hours.

The BEST of 2007. This is a wine that I craved the next day. Seamless intergration of tannins with a well stuctured velventy finish. Have had about 20 of the best 07s and this is still in my top 3. Amazing all the way around. Going to enjoy my next bottle next year and expect an even better wine!
This wine is AMAZING!!! It is definately a drink now but at $200 a bottle i am saving the one i have. Yes i do have a bottle. Buy if you can, small release. WELL WORTH IT

Winemaker Notes - Winemaker Anthony Biagi compares our 2008 PlumpJack Estate Cabernet Sauvignon (98% Cabernet Sauvignon, 2% Petit Verdot) quite favorably to both the 2002 and 2007 vintages as it possess the opulent flavor profiles of the 2007 with the mouth coating tannins of the 2002. He describes this wine as possessing pungent aromas of Blackberry, Plums, Black Cherry and Minerals. They are followed on the palate with flavors of Blackberry Pie, Hoisin, Black Olive and Black Cherry. This wine is more approachable at this point then the 2007 with what I feel are sweeter tannins. It will be at its best 5-7 years from now but will go an easy 15 years.

2008 Cade Cuvee is a worthy successor to the 2007. The inclusion of 7% Malbec gives the wine a juiciness and fruit forwardness. Aromas of black cherry, plums and milk chocolate are followed on the palate with flavors of cocoa, blackberries and warm cherry pie filling.
Aromas of black cherry, minerals, warm chocolate, and black currants are followed on the palate with flavors of blackberry puree, chocolate, vanilla, black olive and rosemary. Rich, plush tannins give this Cabernet outstanding structure.
Aromas of black fruit, cassis, black olive and smoke rise from the glass, with secondary savory aromas, vanilla, black cherry and cola nut developing with aeration. On the palate, the dense flavors of black cherry, baker s chocolate, black olive and dried herbs are followed by structured tannins and acidity that will allow the wine to age gracefully for the next 5-10 years.

Mouth coating flavors of chocolate, black cherry, French roast coffee and hoisin densely lay across your palate building to a long wonderful finish with a slight dusting of tannin. Hard to keep your hands off it now, it will age gracefully for the next 15 years. All in all a very dramatic wine.
