Food Pairings for Plantation Rum Nicaragua
The Plantation rum collection is a rare, unique Caribbean treasure. The Plantation Collection was born with Cognac Ferrand , who has always had close relationship with the best distilleries in the Carribean , selling them casks that had once contained its cognac. Ferrand casks are highly prized by rum producers that use them to mature their spirits. During these exchanges , Alexandre Grabriel had the opportunity to discover some very old batches of rum with extraordinary richness and a diversity of aroma and flavour . Available in tiny quantities , the rums were intended either for the personal consumption of the distillery's cellar master or used to give style to industrial rum blends. Quite naturally , Cognac Ferrand decided to bottle these special rums as a series of rare vintages: the Plantation Collection. Plantation is now a full range of seven vintage rums and three blended rums made by Ferrand's cellar master. Each rum is a perfect expression of its country of origin , its terroir and its distillery. Column distilled , like most Nicaraguan Rum , after a relatively short fermentation period then aged in bourton casks . Its color is reminiscent of old with a copper hue. Plantation Nicaragua has lively , sharp flavors of graprefruit , vanilla and oak , pleasantly rounded off by vegetal notes. A fine balance on the palate between roundness and oak.
