Pine Ridge "Stags Leap District" Napa Valley Cabernet Sauvignon 1996

Winemaker's Notes:

ORIGIN: With a powerful spicy character wrapped in toasty oak, the 1996 Cabernet Sauvignon, Howell Mountain, is our fourth vintage produced from this vineyard. It is a blend of 94 % Cabernet Sauvignon, 4% Merlot, and 2% Petit Verdot. The firm tannins and concentration of a hillside grown wine are the hallmarks of this complex, intense wine that is elegantly balanced. VINEYARD: The vineyard is located on a steep hillside at the 2000 feet elevation on Howell Mountain, a small, unique appellation in northern Napa Valley. WINEMAKING: The grapes were hand harvested in mid September 1996 and macerated on the skins for 32 days. The wine underwent malolactic fermentation in barrel and was aged for 19 months in all new, heavily-toasted French oak barrels. The wine was egg white fined and bottled in June 1998 without filtration. ORIGINAL TASTING NOTES: Black ripe fruit flavors surrounded by smoke and cedar aromas announce this full-bodied dark Cabernet. Massive with a distinctively long finish, the wine will benefit from cellaring at least ten years. CURRENT TASTING NOTES: The ripe red berry aromas and flavors of the 1996 Howell Mountain Cabernet Sauvignon are ready to be enjoyed now. The wine still shows a fruity body and mid-palate, with a long finish and softening tannins. FOOD PAIRING: Grilled T-bone Steak with Garlicky Spinach and Baked Potato This vintage produced 1,351 cases.

Suggested Recipe Pairing presented by
Coconut Rice Sweet Potato Cheesecake

RiceSelect's creamy Arborio gets blended with sweet potato, coconut milk and vanilla to create this decadent cheesecake. Pairs well with Saunternes; a white dessert wine that has hints of coconut from aging in oak barrels.
