Suggested Recipe Pairing presented by
Layered Rice Pudding

RiceSelect's fragrant Jasmati® is blended with eggs, milk and fall's favorite spices, cinnamon and nutmeg, to create a delicious rice pudding, which is layered on top of fluffy cream cheese and abuttery pecan crust. Pairs well with a bold, tawny port with flavors of dried fruits, nuts, and spices.

Great wine and compared to the other wines this compares with ... a great value. Rich mocha, chocolate cab with leather. Big wine with lots of structure and flavor. I'm going to hold onto this one for awhile.

This is one of those Stags Leap appelation cabs that is big, bold and fruity, with a finish that will knock your socks off without overwhelming you. Beautiful velvety, full-mouth feel of a fine cab that has been well-cared for in the barrel before bottling.

Initial aromas of cola, cherry and cigar box segue to hints of chocolate toffee, dried currant andallspice. Firm and silky upon entry, the 2004 Oakville Cabernet shines with layered fl avors of bright cherry, currant, dried blueberry and milk chocolate. Firm, chewy tannins grip the fruit and reveal a long, persistent fi nish accented bytobacco, sugar and toffee. This wine may be enjoyed now or cellared for ten years or more.

This wine is the hallmark of Pine Ridge’s portfolio, since it has been making Cabernet Sauvignon from Rutherford since its inception in 1978. And at the price, which is not inexpensive, and with its stellar quality, it is one of the “value” wines from an excellent vintage in the Napa Valley. The grapes come from three of Pine Ridge’s five Rutherford vineyards, which are all located in the western part of the AVA. The wine is young and a bit closed, as one might expect from a classic Rutherford red. There are some nuances of summer tomato aromas and, on the palate, the dark fruit is a bit brooding (attesting to its immaturity), with substantial tannins, earth and tar. Within a couple of years, this will be a great classic wine; and it will age for 20 years. One of the reasons for its longevity is due to the relatively tame alcohol, which is listed at 13.7 percent. The wine was aged in new, 1- and 2-year-old French barrels for up to 16 months; and was not fined before bottling. There were a little more than 4,000 cases produced.

This is the fourth Cabernet Sauvignon from Pine Ridge’s Oakville vineyard that is near the Napa River. And it’s a beauty reminiscent of the gravel and clay soils, especially in the nose with aromas of dusky earth and hints of dark red fruit and some oak. In the mouth, there’s a feeling of sweet, bright, ripe fruit backed up by excellent acidity. It finishes long and delicious. It has some astringency, so hold it for a year and drink it over the next 15. The vineyard was planted with three different clones and features the famous clone 7, which was first planted here in 1988. The crushed grapes – juice and skins – were macerated for 40 days and the wine was then transferred to French oak barrels for 16 months. The stated alcohol is 14.1 percent and there were less than 2,000 cases produced.

Wine Tasting NotesThe vintage is awash in lush aromas of cranberry, currant, raspberry, cherry and dried blueberry. Opulently layered with notes of tea, dark cocoa and tobacco leaf, this medium to full-bodied wine offers sweet, ripe flavors of cherry and red berries, a firm texture and silken tannins. It has exceptional concentration and endless length on a finish highlighted by berry and tobacco leaf. This wine may be enjoyed now or cellared for up to 15 years.
