Pillitteri Vidal Icewine Canada 2004
The Icewine juice had 36.0º Brix before fermentation. The lower sugar content present in this juice, in comparison to other Pillitteri Estates Winery Icewines which are typically 40?Brix, is essential for the ease of fermentation under abnormal conditions. The fermentation proceeded in a stainless steel vessel that prevented the release of the carbon dioxide gas produced from the alcoholic fermentation hence forcing it into the wine. The result? A Method Cuvee Close / Sparkling Icewine full of effervescence bottled at 5 atmosphere pressure. The ferment proceeded for approximately 2 months at an average 15°C with specialized yeast. No additions, blending or fining occurred after ferment as the wine was simply perfect on its own.
Food Pairings for Pillitteri Vidal Icewine Canada
The tiny effervescence struggles to be expressed in this rare wine due to its’ high viscosity. A deep golden colour with a rich sheen alludes to the highly complex nose of toasted almonds, stewed fruits, lemongrass, fresh morning dew and mild petrol notes. The effervescence fills the palate, completly engulfing the mouth with dominating richness. The explosion of fruit sensations of banana, marmalade and pineapple compliment the lemon sherbet and peach jam complexities that are found throughout.. The finish is nothing short of heavenly with the fruit sensations floating into the extensive persistence.
