What to Expect

Cabenet Sauvignon: Originally of French origins, this versatile grape produces exceptional wines around the globe. It's usually medium to full bodied with a fine structure that supports black and red fruit flavors with typical notes of olive, chili and herbs that add complexity.

Winemakers Notes

Our Cabernet Sauvignon is produced solely from our estate vineyards using blocks with an average age of twenty years. The grapes were harvested the last week of October and the longer hang-time allowed the fruit to fully develop concentration and complexity. After fermentation, the wine underwent four weeks of extended maceration prior to aging for over 2 years in French oak barrels.

This wine has rich flavors of black cherry and blackberry with undertones of dark chocolate and cedar. The wine has a silky texture and soft tannins.

Editorial Reviews

Nicely aromtic with a balance to the cassis, jalapeno, and herb notes with a fine background notes of smoky gravel. There is some oak here but it is well integrated and offers a bit of a background foundation that allows the fruit and mineral tones to pop. This has solid acidity and offers a lean focused mouthfeel at first though over the course of several hours this fills out and gains considerable sweetness. The tannins here are ripe yet crisp and have more than a passing resemblance to Santa Cruz Mountain fruit. A really fascinating dirty, stony nose - full of wet sheeps wool and minerality. Thick, dense and fruity - this is a powerful, yet mineral wine. A unique taste, and one I quite liked. Nice.

Very dark and luscious. Fairly medicinal flavor but overall a nice spicy Cali Cab that offers slightly more complexity than the norm.

There's a spicy black pepper, herbaceous nose which I really like on this wine. The palate is smooth, with dark blackberry fruit, chocolate, smooth round tannins, some light leather and oak, and licorice on the finish. Delicious wine.
